- ½ cup Parmesan cheese, grated
- Salt & pepper to taste

- Cook: Heat olive oil in skillet. Sear chicken until golden on all sides. Transfer to baking dish and bake at 375°F (190°C) for 25–30 minutes until cooked through.
- Make sauce: Melt butter in saucepan, whisk in flour to form roux. Slowly add milk and cream, whisking until thickened. Stir in Dijon mustard, Parmesan, salt, and pepper.
- Serve: Pour Dijon cream sauce over chicken cordon bleu. Garnish with parsley.
