- 1 egg
- 1 tbsp milk

- Activate yeast: Mix warm milk with yeast and a pinch of sugar. Let sit 5–10 minutes until foamy.
- Mix dough: In a large bowl, combine flour, sugar, and salt. Add yeast mixture, eggs, butter, and oil. Knead until smooth and elastic (8–10 minutes).
- First rise: Place dough in a greased bowl. Cover and let rise 1–2 hours until doubled in size.
- Shape: Punch down dough. Divide into 12 equal pieces. Shape into rolls and place on a greased baking sheet.
- Second rise: Cover and let rise 30–45 minutes until puffy.
- Egg wash: Brush rolls with egg-milk mixture. Sprinkle sesame or poppy seeds if desired.
- Bake: Bake at 375°F (190°C) for 18–22 minutes until golden brown.
